(ZA)Zero alpha's Nice baps!


In order to accomplish Adie Webster's latest epic egging idea of making a "Human centipede" burger, we had to make some bread rolls. We've been making our own rolls for years but we had never tried them on the egg before which meant it had to be done!

I made a basic bread dough mixture....strong flour, salt, yeast, melted butter, skimmed milk powder and water which was mixed, kneaded then proved for an hour till it doubled in size. I then knocked the dough back on a floured surface and formed into it into 9 individual rounds. I placed the buns on greaseproof paper, on a pizza peel, in three rows of three but close enough together that, as they proved, they would join together to create three "centipede" buns.



Covered with a cling film "tent" and proved for a second time until they had, once again, doubled in size. I glazed them with a beaten egg mix and then they went into the egg, on a pre-heated pizza stone, at 350 deg F to 380 deg F for 20 minutes then rotated them to get even colour and cooked for a further 20 minutes.


We left them on a cooling rack and they were then ready for Adie to build his dubiously named burger creation. The finished rolls were lighter than air...just delicious!
